Maultaschen - the Swabian national dish.
"Maultaschen" are a kind of Swabian ravioli, a top-quality culinary product.
They reflect the very essence of the region: a delicious heart in an unpretentious
garment.


There are many stories about the origins of the “Maultasche”. According
to one of them, Cistercian monks of the Maulbronn monastery in the
17th century sought to conceal during the Lent their appetite for meat from
God by wrapping meat into some pastry. This gave rise to the vernacular
nickname “God hoodwinker” (“Herrgottsbscheißerle”). But a guilty conscience
vanished with the first bite: what you can’t see, isn’t there!


Nowadays this classic Swabian dish – which has enjoyed a triumphant career
well beyond the limits of Swabia – is on the menu all year round and has been
adopted as haute cuisine.
